Throughout the years, I have developed, gathered, and tweaked recipes until the flavors were perfect. Trust me, I've thrown out many foods and desserts before they reached my level of perfect so don't be afraid to try and keep trying.

This recipe is one of our favorites. We came up with the name for these during a tasting and so their name is a reflection of our collective response to tasting these heavenly little lemon puffs!
We hope you enjoy them as much as we do but be warned they are poppable perfection you just cant get enough of!
In a large bowl sift together the flour, baking powder, and salt. Put aside
In a microwave safe bowl melt the butter and shortening together. Transfer melted butter and shortening into a stand mixer
Add sugar to the butter/shortening mixture and mix well
Add eggs to the stand mixer one at a time, beating well after each addition
Add lemon extract and lemon/orange grated peels. Mix well
Beat well until the mixture is fluffy and soft
Add dry ingredient mixture to the stand mixture gradually and mix well
Check the dough texture once mixed well, by rolling it in the palm of your hand. If the dough seems too sticky to roll in your hand add 1 Tbsp flour at a time and mix well. Do not add too much flour as the dough should be soft and not firm
Roll the dough into 1 Inch round balls and place on ungreased cookie sheets lined with parchment paper. These puff up a lot in size so don’t make them too big
Bake for 8-10 minutes. The bottom of the cookies should be lightly toasted not brown, the top of the cookies should remain light in color
Remove cookies carefully onto a wire rack and cool completely
